Good comparison. If I want the flavor of the food to come through the spice then I use Tabasco. I like it on southern food. Kinda traditional flavor. Tabasco has a one dimensional flavor though. Everything else gets sriracha, even southern food too. Sriracha has a stronger flavor. Not so much stronger but a fuller flavor, multidimensional. But not just a fuller flavor but a REALLY GREAT flavor. Nothing else tastes like it. Like you said, sriracha makes bad food taste great. Goes well practically with everything. Actually there isn’t anything that I’ve put it on that I thought it didn’t improve the flavor. Bad tabaso copy cats will taste really bad. Franks hot sauce is good. Will tried to make sriracha buffalo wings one day. Although fried Asian food is good with sweet Thai chili sauce…and sriracha. 😉

I’m actually more into Sriracha too, but it really depends on what I’m eating

I really do not care for over spicy foods, but I will agree with you that it definitely depends on what you are adding it to.
